🍚 How to Use Karuppu Kavuni Rice (Raw) – Cooking Instructions

🔹 1. Rinse Thoroughly

  • Wash the rice 2–3 times in clean water to remove any dust or excess starch.

🔹 2. Soak

  • Soak the rice in water for 8 to 10 hours or overnight.

    • ⚠️ Soaking is essential as Karuppu Kavuni is a dense, fibrous rice that takes longer to cook.

🔹 3. Cooking Methods

🍲 A. Boiling Method (For Porridge or Plain Rice)
  • Water Ratio: 1 cup rice : 3–3.5 cups water

  • Pressure Cooker:

    • Cook for 5–6 whistles on medium flame.

    • Let pressure release naturally.

  • Open Pot:

    • Boil and simmer until soft (may take 40–50 minutes).

🥣 B. Porridge (Kanji)
  • After cooking, mash slightly and add salt or jaggery based on taste.

  • Optional: Add coconut milk or grated coconut for richness.

🍮 C. Sweet Dishes (Payasam / Sweet Pongal)
  • Cook soaked rice till soft.

  • Add jaggery, cardamom, ghee, and coconut or milk for flavor.

🍛 D. Idiyappam / Dosa / Puttu
  • Use the rice to make flour (after drying and grinding) for traditional recipes like puttu, dosa, or idiyappam.
